SALMON ROLLS 
4 slices brown bread, crust removed
1/4 lb. smoked salmon, sliced thinly
lemon juice
black pepper, freshly ground
butter

Butter 4 slices of brown bread (crust removed), then cover with 1/4 pound thinly sliced smoked salmon. Sprinkle with lemon juice and freshly ground black pepper. Roll up each slice tightly, pressing together well, then cut each roll crosswise into slices about 1/4-inch thick. Keep in the refrigerator until ready to serve. If desired, the butter may be replaced by cream cheese.
