NO MESS FRIED CHICKEN 
1 frying chicken, cut up

BATTER:

1 c. flour
2 tsp. salt
1/4 tsp. pepper
2 tsp. paprika

Heat oven to 425 degrees, HOT. While oven is preheating, melt 1/4 cup shortening and 1/4 cup butter in large baking dish.

Meanwhile dredge chicken pieces in batter. When fat is melted and bubbling lay chicken pieces in skin side down in single layer, don't crowd. Bake 40 minutes. Turn chicken over and bake another 30 minutes or until done. When done remove from fat to drain.
