ORANGE APRICOT MINI MUFFINS 
1 c. flour
1/2 c. wheat germ
1/2 c. whole wheat flour
1 tbsp. baking powder
2 egg whites, beaten
1/3 c. chopped dried apricots
3/4 c. orange juice
1/3 c. honey
1/4 c. oil

Heat oven to 400 degrees. Line muffin pans with paper cups. Combine ingredients and fill muffin cups 3/4 full. Bake 22 to 25 minutes.
