ORANGE APRICOT OATMEAL COOKIES 
6 oz. (about 1 c.) dried apricots, chopped fine
2/3 c. vegetable shortening
1 c. firmly packed light brown sugar
1/3 c. granulated sugar
1 lg. egg
1 tsp. vanilla
1 tbsp. grated orange rind
1 1/4 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
2 c. old fashioned rolled oats

In heat proof bowl, soak apricots in 1/2 cup boiling water for 5 minutes and drain well.

Cream together shortening, brown sugar and granulated sugar until light and fluffy, then beat in egg, vanilla and orange rind; blend well. Mix in flour. Stir in apricots and oats.

Drop batter by rounded tablespoon onto lightly greased baking sheets.

Bake in preheated 350°F oven 12-15 minutes or until edges are golden. Cool on baking sheet for 2 minutes, then transfer to wire rack and cool completely.

Yield: 36 cookies.

Delicious cookies. I used only 1 cup of rolled oats instead of the 2 required. I think the cookies would have been very dry with that much. I rolled them into balls and flattened with a fork. They were baked in 12 minutes. When it says to add the flour it also means to add the other dry ingredients (salt, baking soda and cinnamon) as well.
