BAKED BLUEBERRY SHORTCAKE | |
2 c. all purpose flour 2 tbsp. sugar 2 1/2 tsp. baking powder 1/2 c. butter 1 slightly beaten egg 1/2 c. milk 1 tsp. shredded lemon peel 1 c. blueberries 2 tbsp. sugar Whipped cream In large bowl, stir together flour, first 2 tablespoons sugar and baking powder. Cut in butter until it resembles coarse crumbs. In small mixing bowl, mix egg, milk and lemon peel. Stir into flour mixture until moistened. Spread 1/2 mixture in 8 inch round greased baking pan. Top with blueberries. Top with dough. Sprinkle with sugar. Bake at 400 degrees for 25-30 minutes. Serve warm with whipped cream. |
