CHOCOLATE CHIP MUFFINS 
2 c. all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
1 well beaten egg
1 c. milk
6 tbsp. melted shortening
1 c. chocolate chips

Sift together flour, baking powder, salt and sugar. Combine egg, milk and shortening. Add all at once to flour mixture, stir until dry ingredients are moist but still lumpy. Fold in chips. Fill greased muffin pans two-thirds full. Bake in hot oven, 400 degrees for about 25 minutes. Yield: 1 dozen large muffins. Blueberries or any other fruit may be used in place of chocolate chips.
