CHOCOLATE-CHIP MUFFINS | |
4 c. flour 1 c. light brown sugar 4 tsp. baking powder 1/2 tsp. salt 1 1/2 c. milk 2 lg. eggs 1/2 c. melted butter 1 tbsp. vanilla 1 c. semi-sweet chocolate chips 1/2 c. chopped pecans 1 tbsp. sugar 1. Grease and flour 12 muffin cups. 2. Heat oven to 375 degrees. 3. In large bowl combine flour, brown sugar, baking powder and salt. Make a well in the center. 4. In small bowl combine milk and eggs. Stir in melted butter and vanilla. Pour over flour mixture, stir quickly with fork until combined. 5. Fold in chips and nuts, stir as little as possible. 6. Pour into greased cups, sprinkle with sugar. Bake 20 minutes. |
