CHOCOLATE CHIP OATMEAL COOKIES 
3/4 c. white sugar
3/4 c. brown sugar
1 c. shortening (part lard) (I use 1/2 c. butter, 1/2 c. Crisco shortening)
2 eggs
2 c. sifted flour
2 c. oatmeal (quick oatmeal)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
Chocolate chips
Raisins, coconut & nuts (optional)

Mix white and brown sugar, shortening and eggs. Then add rest of ingredients. Drop by spoonfuls on cookie sheet (lightly greased). Bake at 375 degrees for 8 minutes, switching from top to bottom racks 4 minutes each, until brown.
