PEACH COBBLER 
3 or 4 c. sliced fresh peaches
1/4 c. sugar
1 tsp. almond extract
1 tsp. grated lemon peel
1 tbsp. lemon juice

Arrange peaches in greased 8 inch pan. Sprinkle with sugar, almond extract, lemon juice and lemon peel. Heat in oven while preparing topping.

TOPPING:

1 1/2 c. flour
1/2 tsp. salt
3 tsp. baking powder
1 tbsp. sugar
1/3 c. shortening
1/2 c. milk
1 beaten egg
2 tbsp. sugar

Sift dry ingredients, using 1 tablespoon sugar. Cut in shortening; add milk and beaten egg. Stir just until moistened. Spread over hot peaches and sprinkle with 2 tablespoon sugar.

Bake 40 minutes in 400 degree oven. Serve warm with whipped cream. Serves 9.
