CHICKEN AND ONIONS 
1 lg. onion
1/2 c. vegetable oil
1 (3 lb.) broiler, or 3 lbs. chicken pieces
Salt & pepper
Paprika
Fresh parsley, chopped

Peel the onion and slice 1/4 inch thick. Heat the oil in a heavy skillet, and saute the onion slices on one side until golden, about 3 minutes. Turn the onions and place chicken on top of them. Season the chicken with salt, pepper and paprika to taste. Cover, reduce heat to low and cook slowly for about 1 hour. After 30 minutes, turn the chicken so onion is on top. Add more paprika and continue to cook for an additional 30 minutes, or until chicken is tender. Sprinkle parsley over top.
