CHICKEN AND RICE CASSEROLE 
1 broiler/fryer, cut up
1 c. uncooked rice
1 (4 oz.) can mushrooms
2 c. plus chicken broth
1 tsp. poultry seasoning
1/2 c. mayonnaise or salad dressing
1/2 tsp. salt

Butter a large casserole. Drain mushrooms, reserving liquid. Put rice and mushrooms in casserole and mix. Put mushroom liquid in cup and add chicken broth to make 2 1/2 cups. Pour over rice. Mix salt, poultry seasoning, and mayonnaise; spread on chicken, coating well. Lay chicken on rice in casserole (it looks messy). Bake for 1 hour or more at 375 degrees. Serves 4.

For some reason the chicken browns beautifully, the rice grains separate, and it tastes great!

Chicken comes out so moist and delicious. I add slivers of red pepper for color. Simply delicious!
