MICRO POTATOES PARMESAN 
2 tbsp. butter
2 med. potatoes, unpeeled (about 2/3 lb.), sliced 1/4 inch thick
1/3 c. chopped onion
1 clove garlic, minced
1/2 c. 1-inch green pepper chunks
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. grated Parmesan cheese
Paprika
Chopped parsley

Melt butter in shallow 9-inch dish in microwave oven. Add potatoes, onion and garlic; toss. Cover loosely with plastic wrap and place in microwave oven on full power for 5 minutes. Stir in green pepper, salt and pepper; toss, cover and microwave on full power 3 minutes. Gently mix in cheese. Toss gently and dust with paprika. Microwave on full power, uncovered 3 minutes. Let rest 2 minutes. Sprinkle with parsley.

Since microwave ovens vary in power, you may need to adjust your cooking time.
