MICROWAVE POTATOES PARMESAN 
6 sm. potatoes, sliced 1/4 inch thick
1 onion, sliced or chopped
1 clove garlic, chopped
2 or 3 green onions, chopped
1/2 c. green pepper chunks
1/4 c. parsley, chopped
1/2 block butter, melted
Paprika if desired
Salt & pepper
1/4 to 1/2 c. grated Parmesan cheese

Place butter, potatoes, green onions, onions and garlic in 1 1/2 quart casserole. Toss lightly to coat. Cover with glass lid. Cook on high power for 5 to 6 minutes or until partially cooked.

Stir in green peppers, salt and pepper. Cover with glass lid. Cook on high power 2 or 3 minutes until heated through.

Add cheese, toss lightly. Sprinkle with paprika and parsley as desired. Cook on high power 2 or 3 minutes more, or until heated through.

Since microwave ovens vary in power, you may need to adjust your cooking time.
