MICROWAVE PARMESAN POTATOES 
2 tbsp. butter
3 med. baking potatoes (unpeeled and cut in wedges)
1/2 c. chopped onion
1/3 c. chopped green pepper
dash of salt and pepper
1/4 c. Parmesan cheese (grated)
1 tbsp. chopped parsley (fresh or dried)

Place butter in microwave baking dish and melt. Add potatoes and onion. Stir. Cover tightly with heavy duty plastic wrap. Fold back a corner to allow steam to escape. Microwave at high for 6 minutes, uncover and stir in green pepper, salt and pepper. Cover and microwave at high for 6 minutes. Uncover, stir in cheese, microwave uncovered 2 minutes on high or until potatoes are tender. When done sprinkle with parsley. Yield: 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
