LIME CAKE 
1 3/4 c. all purpose flour
2 tsp. baking powder
1/2 tsp. salt
6 tbsp. unsalted butter or 2 tbsp. butter, softened and 3 tbsp. vegetable oil
1 c. sugar
2 lg. eggs, slightly beaten
1 1/2 tsp. grated lime or 1 Key lime
1 tbsp. fresh Key lime juice
2/3 c. butter milk

Stir flour, baking powder and salt in large bowl, beat butter till softened. Gradually add syrup and heat till blended. Beat in eggs. Beat in lime zest and juice. Using wooden spoon, alternately stir dry ingredients and buttermilk into egg mixture. (Begin and end with dry ingredietns.) Spoon mixture into prepared pan and bake for 45 to 50 minutes at 350 degrees.

SYRUP:

1 c. sifted confectioner's sugar
1/2 c. fresh or bottled lime juice

Bake at 350 degrees for 45 to 50 minutes (in a bundt pan). Whisk confectioner's sugar and lime juice. While cake is still warm, poke holes in it using skewer or cake tester. Slowly spoon syrup over cake. Sift confectioner's sugar over cake.
