TANGY LIME SALSA 
2 lg., ripe tomatoes, cored and chopped
1 med. onion, finely chopped
3 cloves garlic, minced
1/4 c. fresh lime juice
1 jalapeno pepper, stemmed, seeded, and minced (be careful not to burn hands or eyes) or 2 canned whole green chiles
1 tbsp. dry white wine
1 tsp. chili powder
Pinch of ground cumin
Freshly ground black pepper to taste

Combine all the ingredients in a medium mixing bowl and let stand at room temperature for 1 hour before serving. Yield: about 1 1/2 cups.

A very good salsa. I added a shot of tequila to it just to spice things up a bit. Worked very well.

This was a great recipe, perfect for people who don't like cilantro! --I left out the chili powder, wine and cumin because I didn't have it. I will say the onion amount seems like a little bit much. After it set overnight in the fridge, it was twice as good! Yielded around 4-5 cups for me.
