POTATO SUPREME 
Cook potatoes the night before.

6 medium potatoes (cooked in jackets)
Salt
1/2 c. butter, melted
2 c. cheese, shredded
1/2 c. green onions, chopped
1 pt. sour cream
1/2 tsp. pepper

Cook potatoes in small amount of boiling water until tender. Drain and refrigerate covered overnight. Next day, grate potatoes coarsely. Mix with remaining ingredients and 1/2 teaspoon salt. Put in shallow, lightly greased with butter, baking dish. Bake in moderate oven (350 degrees) about 35 minutes. Makes 6 servings.
