HOLIDAY MINTS 
3 egg whites
6 c. confectioners' sugar
Red and green food coloring
1/2 tsp. peppermint extract
1/2 tsp. spearmint extract

Beat egg whites until stiff, adding sugar gradually. Divide candy into 2 portions. Tint half green and half red. Add peppermint extract to red mixture and spearmint extract to green mixture. Roll candy between 2 pieces of waxed paper. Cut with small round cookie cutter. Let dry overnight.
