SYRIAN BREAD (PITAS) | |
5 lbs. flour (set aside in a bowl) 1 1/2 tbsp. salt 1 c. warm water Add salt to flour. Dissolve 1 large cake yeast in water. Add 1 teaspoon sugar and let set until the mixture bubbles. Pour 5 cups warm water over flour. Pour in yeast mixture. Knead. Let rise until doubled. Punch down and let rise again. Punch down again and break off into small balls the size of a tennis ball, a bit smaller, and flatten. Place on oven floor until bottom is browned. Put in broiler until top is lightly browned. Can be frozen. Great stuffed with chicken salad, stir fried vegetables (sliced zucchini, onions, mushrooms and green peppers). |
