CINNAMON ZUCCHINI CAKE 
4 eggs
1 1/2 c. cooking oil
3 c. flour
3 c. sugar
1 1/2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
1 c. nuts, chopped
1 c. raisins
3 c. zucchini, unpeeled, grated

Beat eggs, add cooking oil and sugar. Beat until blended. Sift together the flour, baking powder, soda, salt and cinnamon. Add to egg mixture, mix well. Stir in nuts, raisins and zucchini and spread into a greased 9 x 13 inch baking pan. Bake about 1 hour in 350 degree oven. Cool and frost.
