PUMPKIN BREAD | |
3 1/2 c. self-rising flour 3 c. sugar 2 tbsp. & 2 tsp. cinnamon 1 tsp. nutmeg 1 tsp. allspice 1 tsp. baking soda 1 c. oil 4 eggs 2/3 c. water 1 can pumpkin 1 c. nuts, chopped 1 c. seedless raisins Mix dry ingredients. Beat in oil, eggs, pumpkin and water. Fold in nuts and raisins that have been rolled in flour. Line bottom of 4 coffee cans and grease. Divide mixture and bake at 325 degrees for 1 hour and 15 minutes. (I grease and flour small loaf pans. Makes 3 loaves.) |
