HASH BROWN CASSEROLE 
1 pkg. hash brown potatoes
1/2 pt. sour cream
4 oz. cheddar cheese
2 sticks butter
1 sm. box Ritz crackers
1 sm. chopped onion
Pepper and salt to taste
1 can cream of chicken soup

Mix 1 stock of melted butter with all ingredients except crackers. Crush crackers on top and melt the other stick of butter. Pour over crackers. Bake at 350 degrees for 45-60 minutes.
