SOUTHERN FRIED HASH 
1 c. chopped onion
1 c. chopped green pepper
2 tbsp. butter
1 lb. lean ground beef or turkey
2 c. canned tomatoes
1 1/2 c. cooked rice
1 1/2 tsp. salt
1/8 tsp. black pepper
1 1/2 c. pulled bread crumbs

Preheat oven to 350 degrees. In 10-inch skillet melt butter. Saute onion and green pepper until tender. Add ground meat and cook until done (7-8 minutes). Stir well with fork.

Mix in shredded, drained tomatoes (use 1/4 to 1/2 cup of juice), rice and seasonings. Pour into buttered 2-quart baking dish. Sprinkle with the crumbs and drizzle with melted butter. Cover; bake 1/2 hour (uncover last 10 minutes).

Pulled bread crumbs: Dampen toasted slice of bread with water. Squeeze together; pull apart into crumbs.
