JOEM'S BAKED ITALIAN CHICKEN | |
Most types of chicken will work for this dish. If using a whole chicken, cut it up first! 2-3 lb. chicken breasts (I use boneless/skinless) aluminum foil MARINADE: 1/3 (16 oz.) bottle Italian salad dressing (I use fat-free) 4 large oranges, juiced 2 medium lemons, juiced thyme basil oregano salt and pepper Preheat oven to 400°F. Prepare marinade by mixing Italian dressing and freshly squeezed juices. Then if you have them put in thyme, basil and oregano. Season with a lot of pepper and a tiny pinch of salt. Mix well. Dip chicken pieces in marinade then separately wrap each piece in foil. Place in baking dish and bake at 400°F for 1 hour. Variation: Place marinated chicken in dish and pour remaining marinade over all. Cover entire dish with foil. Submitted by: Joem Amma |
