MAMA'S GREEN BEANS | |
2 cans green beans OR 2 lb. fresh green beans 1 large onion, chopped 3 tbsp. oil 3 tbsp. flour Drain cans of beans. Refill one can with water. Make a light roux with oil and flour. Sauté onions in roux. Add the green beans plus one can of water to the onions. Season to taste. Cover and simmer 1/2 hour. If using fresh beans, add water and cook the same. Also, you can cook 2 slices of bacon and make a roux with bacon grease. Break up bacon and add to beans. |
