SCALLOPED POTATOES 
3 tbsp. butter
2 tbsp. flour
3 c. milk
Salt and pepper to taste
6 lg. potatoes, peeled, thinly sliced
1 onion, thinly sliced
1 lb. diced ham

Melt butter in saucepan and mix in flour until smooth. Stir in milk a little at a time with a wire whisk. Add salt and pepper. Dice ham into 1/2 inch cubes. Grease casserole and layer sauce, potatoes, onion, ham and sauce. Bake at 375 degrees, covered, for 1 hour. Uncover and continue cooking until top browns, 10 to 15 minutes. Serves 4.
