SCALLOPED POTATOES 
4 tbsp. butter
6 tbsp. flour
4 c. milk
2 tsp. salt
1 c. sliced pimento cheese, broken up
1/4 tsp. pepper
1/2 c. chopped onions
7 c. potatoes, sliced

Melt butter, add flour and blend. Add milk and cook over low heat until thick, add seasoning, onions and cheese. Put 1/2 sliced potatoes in 9 x 13 baking dish (greased with butter). Cover with sauce. Add another layer potatoes and sauce. Cover and bake at 350 degrees for 30 minutes. Uncover and bake 30 minutes more.
