HOLIDAY SOUFFLE 
10 slices bread, white or whole wheat
1 lb. Smithfield ham sausage or 2 c. chopped Smithfield ham
6 eggs
1 c. shredded sharp cheddar cheese, grated
3 c. milk
1/2 tsp. black pepper
1/2 stick butter

Cook and drain sausage on paper towel. Cut bread into 1 inch squares and place in 9 x 12 x 2 inch dish or baking pan sprayed with oil. Beat eggs and milk and pepper. Pour over bread. Add meat and cheese over top. Cut butter into small pieces on top. Cover and refrigerate overnight. Next morning, preheat oven to 350 degrees and bake souffle uncovered for 35 to 40 minutes. Cut and serve.
