APPLESAUCE CAKE 
2 cups sugar
3 eggs, at room temp
1 cup shortening
3 cups cake flour
1 tsp. salt
1 tsp. baking soda
1 tsp. each: cinnamon, nutmeg, ginger
1/2 tsp each: cloves, allspice
1 box golden raisins
2 cups black walnuts (English walnuts may be used)
1 25oz jar applesauce

Grease and flour a large tube cake pan.

Preheat oven to 325°F. Cream shortening and sugar, add eggs one at a time, beating well after each. Add spices and mix well. Add applesauce and mix well. Add salt and baking soda to flour and stir.

Fold in flour mixture - do not beat. Add raisins and nuts.

Bake 2 hours.

This recipe is wonderful, although I did make a few changes. Add 1 and one half teaspoons of baking powder along with the baking soda to make this cake lighter. I also used a cup of butter instead of shortening and cranraisins instead of regular raisins. I also baked it in a bundt pan instead of a tube pan.
