DIET SOUP 
Select any of these vegetables.

Green beans
Green onions
Onions
Zucchini
Yellow squash
Carrots
Bell pepper
Corn, (optional)
2 sm. potatoes (optional)
2 tbsp. vegetable oil
1 lg. can Progresso
Crushed tomatoes
1 tsp. thyme
1 tsp. black pepper
1 tsp. salt or 2 tbsp. soy sauce
1 tsp. garlic
1/2 tsp. cayenne pepper

Saute onion, bell pepper with spices until onion is transparent, add carrots, green beans, squashes and stir fry 3 or 4 minutes. Add rest of vegetables and cook 3 or 4 minutes. Add tomatoes and cover well with water. Simmer low for several hours.

Vegetables can be sliced, grated or chopped.
