ZITI WITH CHICKEN AND PEPPERS 
2 tbsp. olive oil
1 c. chopped green pepper
1/2 c. finely chopped onion
1 clove garlic, minced
1/4 lb. fresh mushrooms, sliced
1 lg. whole boned and skinned chicken breast, diced (10 to 12 oz.)
1 can (16 oz.) Italian tomatoes, drained and chopped
1/2 c. chicken broth
2 tbsp. tomato paste
1/2 tsp. oregano
Salt and freshly ground black pepper
1/2 lb. ziti

Heat oil in a heavy saucepan or skillet. Add green pepper and onion and saute over medium heat for 5 minutes until barely tender. Add garlic and saute for another minute. Add mushrooms and cook, stirring until mushrooms wilt, about 5 minutes longer. Add chicken and cook, stirring, until chicken turns white. Stir in tomatoes, broth and tomato paste. simmer for 2 minutes, then add oregano, salt and pepper to taste. Simmer uncovered for 15 minutes. While chicken is cooking, boil ziti in salted water until done, about 8 minutes. Drain. Add ziti to chicken mixture, stir gently and cook for 10 minutes. Season with additional salt and pepper if necessary. Serves 3 to 4.
