ICE BOX OATMEAL COOKIES 
1 c. brown sugar
1 c. shortening
1 tsp. salt
1 1/2 c. flour
3 c. quick oatmeal
1 c. white sugar
2 eggs
1 tsp. baking soda
1/2 c. nuts; optional

Beat together sugar and shortening until light. Add eggs. Combine dry ingredients (except oatmeal). Add to sugar mixture. Stir in oatmeal and nuts. Form into rolls and wrap tightly in waxed paper. Refrigerate.

Slice off when cookies wanted.

Bake at 350°F for 10-14 minutes (watch carefully and remove cookies when set but not browned). Less baking time makes for a chewier oookie; more baking time makes for a crisp cookie!
