ICE BOX OATMEAL COOKIES 
1/2 c. shortening
1/2 c. butter
1 c. brown sugar, packed
1 c. white sugar
2 eggs, beaten
1 1/2 c. flour
1 tsp. baking soda
Dash of salt
1 tsp. vanilla
3 c. quick oatmeal
1 1/2 c. coconut
1/2 c. nuts, chopped

Cream shortening, butter and sugar; add eggs, vanilla, mix well. Add soda, salt and blend. Add oatmeal, coconut, and nuts and stir well.

Form into a log, wrap in foil and place in refrigerator overnight. Slice and bake until brown in 375 degree oven.
