NO CHOLESTEROL HONEY BRAN
MUFFINS
 
1 c. whole wheat or all-purpose flour, unsifted
2 c. whole bran cereal
2 tsp. baking powder
1/2 tsp. salt
1/2 c. raisins
2 egg whites
1 c. skim milk
1/3 c. corn oil
1/4 c. honey

In large bowl stir flour, bran cereal, baking powder, salt, and raisins. In small bowl stir egg whites, milk, corn oil, and honey until well blended. Stir into flour mixture just until moistened. Let stand 3 minutes. Spoon into muffin cups. Bake at 400 degrees for 15 to 20 minutes or until lightly browned.
