SHRIMP CASSEROLE 
1 lg. onion, sauteed
2 c. Spanish rice
1/2 c. sharp cheese, cut up
1 lb. shrimp, cooked and shelled
4 tbsp. sherry

Place in casserole. Sprinkle with cheese. Bake 350 degrees for 30 minutes. I usually make my own Spanish Rice.
