CANNED APPLE PIE FILLING 
Sliced apples
9 c. water
3 1/2 c. sugar
1 c. sugar
1 c. cornstarch
1/4 tsp. nutmeg
1/4 tsp. cloves
1 tsp. almond extract
2 tsp. cinnamon
1 c. water
1/4 tsp. salt
3 tbsp. lemon juice

Fill seven 1 quart jars with sliced apples. In a large kettle bring to boil the 9 cups water and 3 1/2 cups sugar. In a large bowl mix the remaining ingredients. Stir into the liquid and cook until clear. Pour over the apples in the jars. Seal and process in a boiling water bath for 25 minutes.

To use, pour into a crust and bake as usual. For peach pie, omit cloves and almond extract.
