APPLE PIE FILLING 
4 1/2 c. sugar
1 c. corn starch
2 tsp. cinnamon
1/4 tsp. nutmeg
3 tbsp. lemon juice
5 1/2 to 6 lb. of tart apples

Blend first four ingredients and add salt. Stir in 10 c. water. Cook over medium heat until thickened. Add lemon juice and mix till right consistency. Be sure your syrup is really thick. Place in jars and water bath 20 minutes.
