PORK CHOPS CREOLE 
4 pork loin, 1/2 to 3/4 inch thick
1 tsp. salt
1/4 tsp. pepper
4 thin slices onion
4 green pepper rings
4 tbsp. uncooked instant rice
8 oz. stewed tomatoes

Brown chops in 10 inch skillet over medium heat; sprinkle with salt and pepper. Top each with 1 onion slice, 1 pepper ring, 1 tablespoon rice, and 1/4 cup tomatoes. Reduce heat; cover and simmer until done, about 45 minutes. Add a little water if necessary. 2 servings.
