BEEF AND GREEN PEPPERS
1 1/2 tbsp. oil
1 clove garlic, cut in slivers (optional)
1 1/2 lb. good steak, cut in 1" strips
1 tsp. salt
Pepper
1 beef bouillon cube
1 c. hot water
2 tbsp. cornstarch
2 tbsp. sugar
2 tbsp. soy sauce
2 green peppers, cut in strips
1 onion, sliced

Heat oil and garlic; when garlic turns brown, remove. Brown beef, add salt and pepper. Cover, simmer 10 to 15 minutes. Add green peppers and onions and simmer for approximately 5 minutes. Add bouillon cube dissolved in hot water with sugar, cornstarch and soy sauce mixed in. Cook until sauce thickens, stirring slowly. (If you want vegetables more tender, extend cooking time. Also, if you want the meat more tender, extend cooking time when simmering meat. If you want the vegetables very crisp, don't add until you add the cornstarch mixture.) Serve any way you like: over rice, noodles, etc. or by itself.
