BUTTERMILK SWEET POTATO PIE 
2 1/2 c. cooked, mashed fresh or canned yams
2 tbsp. butter
1 1/2 c. sugar or to taste
2 lg. eggs
1/2 c. buttermilk
1 tsp. vanilla
Nutmeg
9 inch unbaked pie shell

Combine hot yams with butter and sugar. Add eggs, beat well. Add buttermilk and vanilla. Pour into pie shell; sprinkle top with nutmeg. Bake at 350 degrees until filling is set.
