FRUITED CHICKEN SALAD | |
4 c. diced, cooked chicken 1 (15 oz.) can drained pineapple chunks 1 c. chopped celery 1 (11 oz.) can mandarin orange sections, drained 1/2 c. sliced ripe olives 1/2 c. diced green pepper 2 tbsp. grated onion 1 c. mayonnaise or salad dressing 1 tbsp. prepared mustard 1 (5 oz.) can chow mein noodles In large bowl, combine cooked chicken, pineapple, celery, oranges, olives, green pepper, and onion. Blend mayonnaise or salad dressing and mustard; toss gently with chicken mixture. Cover and chill for several hours. Just before serving, mix in chow mein noodles; turn salad onto a lettuce-lined serving bowl. Makes 8 servings. |
