PINEAPPLE DATE LOAF | |
1/4 c. soft butter 1/2 c. sugar 1 egg 1/4 tsp. lemon extract 1 (8 1/2 oz.) can crushed pineapple 1/4 c. chopped nuts 2 1/2 c. sifted flour 2 1/2 tsp. baking powder 1/4 tsp. baking soda 1 tsp. salt 1/2 c. chopped pitted dates 1/4 c. water 1/4 c. chopped maraschino cherries, well drained Cream butter and sugar, add egg and lemon extract. Drain pineapple, reserving liquid. Add crushed pineapples and nuts to creamed mixture. Sift dry ingredients together. Add dates and mix well, separating date pieces with your fingers. Stir dry ingredients into creamed mixture alternately with reserved pineapple juice plus 1/4 cup water. Fold in the chopped maraschino cherries. Pour into greased 9 x 5 x 3 inch loaf pan. Bake in moderate oven 375 degrees for about 55 minutes. Cool in pan 10 minutes, remove from pan cool completely. Makes 10 servings. |
