CHEESE RING 
1 (16 oz.) pkg. extra sharp cheddar cheese, shredded
1 (16 oz.) pkg. medium cheddar cheese, shredded
1 sm. onion, grated
1 c. mayonnaise
1 tsp. red pepper
1 c. chopped pecans
Parsley sprigs
Strawberry preserves

Combine first 5 ingredients and mix well. Food processor does fine job. Sprinkle about 1/2 cup pecans in oiled 1 cup ring mold and press cheese mixture into mold. Chill until firm. Unmold onto platter and pat remaining nuts onto cheese ring. Garnish with parsley sprigs. Put container of strawberry preserves on center of mold. Circle with crackers. Yield: 1 beautiful cheese ring.
