SHRIMP SCAMPI | |
1 1/2-2 lb. med. shrimp 1 lemon 3/4 c. flavored bread crumbs 1 1/2 tbsp. Parmesan cheese 3 tbsp. fresh chopped parsley 3-4 chopped garlic cloves 1/2 tsp. oregano 1/2 green pepper 3-4 chopped scallions 1/4 tsp. dry red pepper 1/3 c. dry white wine TOPPING: 6-8 tbsp. butter 5-6 tbsp. pure olive oil Clean shrimp. While moist, squeeze juice of 1 lemon over shrimp. Cover and let sit for couple of hours in refrigerator. Chop and mix all other ingredients with wine. Pour wine in Pyrex dish and place shrimp in dish. Cover with mixture, spreading evenly over shrimp. Place 6-8 tablespoons of butter over mixture. Pour 5-6 tablespoons pure olive oil over mixture. Place in 325 degree oven for 25 minutes. Serves 3-4. |
