RED PEPPER RELISH 
6 red bell peppers, chopped fairly fine
1 c. vinegar
1 1/2 c. sugar
1 tsp. salt
1 tsp. hot sauce (optional)

Combine all ingredients. Simmer slowly for 45 minutes after mixture has reached full boil. Cool.

Pour part of the mixture over an 8 oz. block of cream cheese. Replenish as needed with the remaining mixture. Serve with crackers, or celery stalks, carrot sticks, etc. for dipping.
