SHERI'S PICKLE PEPPER PIMENTO
RELISH
 
Great on burgers!

4 dill pickles, chopped relish style
1 yellow sweet pepper, chopped finely
1 red sweet pepper, chopped finely
1 small green pepper chopped finely
2 to 3 tbsp. pimentos
1/2 onion, minced
1 clove garlic (or 1 1/2 tsp. minced garlic)
pinch of lemon pepper seasoning for taste (optional)
3 shakes dried red pepper flakes (for a little heat)

Wash vegetables and chop all ingredients.

In a medium bowl add relish style pickles, add peppers and toss all around. Add pimentos, onions and garlic. Toss again. Then add your dry ingredients. Toss again.

Remember these seasonings are optional, so you can add any spice you want. A little dill seasoning is good as well or a little lemon juice.

Variation: Add a chopped tomato to the mix for extra oomph.

Put on burgers, meat salads or your pasta salads to try something different. Does not require a lot considering this is a strong relish.
