ESTANBOLI POLO 
4 tbsp. butter
1 lb. ground beef or stew meat, cut into 1/2 inch cubes
1 med. onion, finely chopped
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. cinnamon
1/4 tsp. paprika
2/3 c. tomato sauce
1/2 c. water
2 to 3 tbsp. lemon juice
2 1/2 c. rice
Salt to taste
Water to cook rice
Butter to taste

Melt butter in a 3-quart pot. Add meat, onions and seasonings and saute until meat is browned. Add tomato sauce, water and lemon juice and let simmer for 30 minutes on a medium fire or until the meat absorbs all the juice. Cook rice and then mix together with meat mixture. Serve with mast va khiar (yogurt with cucumbers). Makes 4 to 5 servings.
