ENCHILADAS | |
2 lb. hamburger 2 cloves garlic 4 lb. Longhorn cheese 1/4 c. flour 2 c. chopped onion 2 pkg. French's sloppy joe mix 3 doz. flour tortillas 2 1/2 c. water Crumble hamburger meat up in a skillet and add one cup of water plus one cup onion and the finely chopped garlic. Cook until water is gone. Then add the two packages sloppy joe mix and the remaining water and cook until liquid is cooked down. Add flour to thicken mixture and continue to heat. To assemble, put 2 tablespoon meat mixture into flour tortilla, sprinkle a little onion and cheese on meat and roll up. Place in a baking dish. Pour sauce over tortillas. Bake 20 to 25 minutes in a 425 degree oven. Makes 3 dozen. Serve with fried beans. E: 1/2 c. hot lard 1/8 c. chili powder 1/2 tbsp. salt 3 1/2 c. water 1/2 c. flour 1 tbsp. camino 1/2 tbsp. pepper Mix all ingredients except water together after lard is melted. After mixing, gradually add water until thickened. Pour over tortilla and cheese on top of sauce. Bake at 425 degrees for 20 to 25 minutes. |
