RICE AND BEEF SALAD 
16 lbs. brown rice, cooked
10 oz. (1 pt.) onions, chopped
1 lb. (1 qt.) celery, chopped
8 oz. (1 pt.) green pepper, chopped
6 lbs. beef, cooked, leftover, chopped
4 2 qt. mayonnaise
1/2 c. mustard
1 lb. (1 pt.) sweet pickle relish
1 c. half & half
Salt and pepper to taste
96 lettuce leaves
About 5 lbs. tomatoes, sliced
8 cucumbers, sliced
48 eggs, hard cooked, sliced

In a bowl, mix rice, onion, celery, pepper, beef, mayonnaise, mustard, pickle relish, and half & half with salt and pepper to taste. Pile mixture on lettuce leaves and surround with tomato, cucumber, and egg slices. Chill until ready to serve. Yield: 48 (1 cup) servings.
