QUICK TOMATO SOUP 
4 c. canned tomato juice
1 c. water
3 celery stalks, thinly sliced
1 carrot, peeled and grated
1/2 c. chopped onions
2 to 4 tbsp. lemon juice
1 clove garlic, minced or pressed
1/2 tsp. dried basil leaves
Salt and black pepper
Hot pepper sauce
1/2 c. chopped Chinese cabbage for garnish
Lemon slices

In a saucepan, combine tomato juice, water, celery, carrot, onion, lemon juice, garlic, basil, salt, black pepper, and hot pepper sauce. Bring to boil over high heat. Reduce heat and simmer for 30 minutes. Pour into soup bowls. Garnish with chopped cabbage and lemon slices.
